Markham Personal Trainer reveals his easy to make substitute for mashed potatoes

Okay…let’s get one thing straight…I am horrible at cooking.  Like really really really bad at cooking. When all of your food is cooked on a George Foreman grill…you know I got problems with cooking.

So that is why I like easy to make recipes that are healthy and also make me look like I know what I’m doing in the kitchen.

As a personal trainer in Markham, I really have to stay lean all year round (I mean, who wants to attend a boot camp in Markham when the instructor is overweight?) so I have to eat low carb to keep my fat levels down.

The problem is I love garlic mashed potatoes with a passion. Especially if they are made fresh with real potatoes…not that powdered stuff.

So when I found this recipe….I was in Faux-tatoe heaven!

So here is my recipe for Garlic Mashed Cauliflower…it tastes just like mashed garlic potatoes and it is 10x more healthier. Enjoy!

Ingredients
1 large head cauliflower
1 tbsp butter, coconut
oil, or Smart Balance
butter spread
2 cloves garlic, chopped
1 tsp salt

Prep Time – 25 minutes
Difficulty Level – Easy
Servings – 3

Instructions:

In a large pot with a tight-fitting lid, steam the cauliflower for 15 minutes in 2 inches of water.

Transfer the cauliflower to a food processor (or mash them up with a potato smasher..or whatever it’s called) and puree in small batches, until incorporating all of the cauliflower.

Add the butter, garlic and salt, and continue processing until it reaches a smooth, creamy texture.

And VOILA!

You got healthiest and tastiest substitute for Garlic Mashed Potatoes on the planet.  Add in some protein and you are all set to go.
